The History of Key Lime Pie

Key lime pie is a signature treat from the bakery at Costera, and one of South Florida’s most iconic desserts. But what are the origins of this delicious tart? While no one knows for sure who made the first key lime pie, it was likely created as a new interpretation of magic lemon cream pie. Some claim that in the late 1800s, a wealthy ship salvager’s cook - referred to as “Aunt Sally” - was the one responsible for creating the delicacy. Others believe it was made by sponge fishermen near Key West as a ration for their trips at sea. Regardless of its origins, it wasn’t until the 1930s that the recipe was written down. Due to a lack of fresh milk in the Florida Keys, bakers used sweetened condensed milk in the pie recipe, which came in a can and was less perishable. With the unique flavor of key limes, this is the ingredient that gives the filling its sweet taste and smooth, creamy texture. The dessert continued to grow in popularity. In the 1950s, it was promoted as the state’s “most famous treat” - a reputation it still holds to this day!
